    • 2 x 300 g Northern Ireland Quality Assured Sirloin or Rib eye steaks
    • 1 x 5 ml (1 tsp) Olive oil
    • Black pepper

    To serve:

    • Salad leaves
    • Cherry tomatoes
    • Crusty bread

    • Remove the steak from the fridge 45 minutes before cooking to bring to room temperature.
    • Pre-heat the oven to 180oC or gas mark 4.
    • Using your hands, rub the steaks with the olive oil and black pepper.  Remember to wash your hands thoroughly after handling raw meat.
    • Heat a large frying pan until very hot and sear the steaks for 1 minute on each side.
    • Place the steaks on the baking tray and cook in the oven for 4-7 minutes.
    • Remove the steaks from the oven and wrap in tin foil to rest for 5 minutes.
    • Remove the steaks from the tin foil and serve with crusty bread and salad.
