    • 500 g Northern Ireland Farm Quality Assured lean steak pieces
    • 1 tsp Vegetable oil
    • 1 Red onion
    • 2 Garlic cloves, crushed
    • 1 tsp Fresh ginger, grated
    • 3 tbsp Reduced salt soy sauce
    • 3 tbsp reduced sugar sweet chilli sauce
    • 4 Spring onions
    • Juice of a lime
    • A pinch of chilli flakes
    • 2 x 300 g Packets straight to wok Udon noodles or similar

    To serve

    • 80 g Mixed leaves

    • Peel and dice the red onion and slice the spring onions.
    • Heat the oil in a large wok over a high heat and fry the onion for 5 minutes until soft and browning.
    • Stir in steak pieces and cook for 5 minutes.
    • Add crushed garlic, grated ginger, reduced salt soy sauce and reduced sugar sweet chilli sauce. Cook for a minute, and then add half the spring onions, lime juice and chilli flakes.
    • Heat the noodles as per packet instructions and arrange them into serving bowls.
    • Top with steak and add the remaining spring onions, chilli flakes, and lime juice.
    • Serve with a side salad.
