Ingredients
- 450 g Lean minced beef Northern Ireland Farm Quality Assured
- 1 onion
- 1 clove of garlic
- 500 ml passata
- 1 reduced salt beef stock cube
- 1 tsp mixed dried herbs
- 100 g frozen spinach thawed
- 6-8 no cook lasagne sheets
- 1 egg
- 150 g natural yoghurt
- 150 ml semi skimmed milk
- 50 g grated cheese

Method
- Pre-heat the oven to 180°C or Gas mark 4.
- Peel and chop the onion. Peel and crush the garlic.
- Add the minced beef, onion and garlic to a frying pan and dry fry until the meat has browned.
- Add the passata, stock cube and dried herbs and stir. Simmer for 10 minutes.
Assemble the lasagne
- spoon half of the mince into the bottom of an oven proof dish;
- place the lasagne sheets on top so that they cover the mince;
- layer the spinach on top of the lasagne sheets;
- add another layer of lasagne sheets on top of the spinach;
- spoon the remaining mince over the lasagne.
- Crack the egg into a mixing bowl and add the milk and yogurt. Whisk together using a fork.
- Grate the cheese. Add half of the cheese to the egg, milk and yogurt and whisk.
- Spoon the mixture on top of the mince. Sprinkle the remaining cheese on top.
- Bake in the oven for 25-30 minutes.
- Serve with a salad and crusty bread.
