Ingredients
- 450 g Northern Ireland Farm Quality Assured lean sirloin or rump steak
- 2 x 15 ml (2 tbsp) Reduced salt dark soy sauce
- 1 x 5 ml (1 tsp) Dark soft brown sugar
- 2 x 5 ml (2 tsp) Fresh ginger
- 1 Ripe mango
- 2 Spring onions
- 1 x 5 ml (1 tsp) Olive oil
Sauce
- 1 Lime
- 1 x 15 ml (1 tbsp) Reduced salt dark soy sauce
- 1 x 15 ml (1 tbsp) Runny honey
- 1 x 5 ml (1 tbsp) Cornflour

Method
- Finely slice the beef and place in a mixing bowl. Remember to wash your hands thoroughly after handling raw meat.
- Mix the soy sauce and sugar and pour over the beef. Leave to marinate for 15 minutes.
- Peel and grate the ginger. Peel and remove the stone from the mango and slice finely.
- Remove the root and skin from the spring onions and slice into 2.5cm pieces.
- Heat the olive oil in a frying pan, add the beef and marinade. Stir in the grated ginger.
- Fry the meat for 5-6 minutes until cooked.
- Juice the lime. Add the soy sauce, honey, lime juice and cornflour to a bowl and mix well.
- Add the mango and spring onions to the frying pan and stir well.
- Pour in the sauce and mix well. Cook, stirring for 2 minutes.
- Serve the beef with boiled rice.
