    • 4 Northern Ireland Farm Quality Assured steaks (rump, sirloin)
    • 1 Red onion
    • 2 Beef tomatoes
    • 1 x 5 ml (1 tsp) Oil
    • 25 g Wild rocket
    • 125 ml Reduced fat French dressing

    To Serve:

    • Mashed potato
    • Salad

    • Peel, remove the top and bottom of the onion and slice thickly.
    • Thickly slice the tomatoes.
    • Heat the oil in a frying pan and fry the tomato slices and red onion for 1 minute on each side.
    • Remove the tomato and onion and wrap in tin foil to keep warm.
    • In the same pan, fry the steaks for 4 minutes on each side.  Remove from the pan and wrap in tin foil to rest.
    • Remove the tomatoes, onion and steaks from the foil and arrange on plates. Add the rocket.
    • Drizzle over the dressing.
    • Serve with mashed potato and salad.
