Pre-heat the oven to220°C or Gas mark 7.
Remove the stalk and seeds from the pepper and cut into quarters. Cut the tomatoes in half.
Place on a baking tray.
Place the mince into a mixing bowl, using your hands divide into 4 equal portions and shape into burgers about 1 cm thick. Remember to wash your hands thoroughly after handling raw meat.
Place the burgers on the baking tray next to the peppers and tomatoes.
Brush the pepper quarters with the pesto and fill with the tomato halves and basil.
Place the waffles, chips or wedges onto a baking tray.
Cook the burgers, pesto peppers and waffles/chips/wedges in the oven for 20 minutes.
Serve the burgers on top of the waffles with the pesto peppers and a side salad.
