Ingredients
- 4 Large baking potatoes cut into large wedges
- 1 tbsp Olive oil
- 1 tsp Smoked paprika
- 1/2 tsp Garlic powder
- 1/2 tsp Salt
- 1/2 tsp Black pepper
For the Steak
- 2 Northern Ireland Farm Quality Assured Thick Sirloin Steaks
- 1 tbsp Olive oil
- 1 tbsp Worcestershire sauce
- 1/2 tsp Salt
- 1/2 tsp Black pepper
- 1/2 tsp Ground cumin
For the topping
- 100 g Cheddar cheese grated
- 2 tbsp sour cream
- 1 tbsp Hot sauce (sriracha)
- 2 Spring onions sliced
- 1 Red chilli finely chopped
- Fresh coriander chopped

Method
- Pre heat oven to 200°C (Fan 180°C) Gas mark 6.
- Toss potatoes with olive oil, paprika, garlic powder, salt, and pepper, spread on a baking tray and roast for 35 - 40 minutes, turning halfway, until crispy.
- While the potatoes roast, rub steaks with Worcestershire sauce, olive oil, salt, pepper, and cumin.
- Heat a pan over high heat. Sear the steaks for 2- 3 minutes per side for medium-rare (or longer if preferred).
- Rest the steaks for 5 minutes, then slice thinly.
- Spread crispy potatoes on a large serving plate and sprinkle the grated cheese over and let it melt slightly.
- Add sliced steak, then drizzle with sour cream and hot sauce.
- Garnish with spring onions, chilli, and fresh coriander.
