    Ingredients
    • 4 Large baking potatoes cut into large wedges
    • 1 tbsp Olive oil
    • 1 tsp Smoked paprika
    • 1/2 tsp Garlic powder
    • 1/2 tsp Salt
    • 1/2 tsp Black pepper

    For the Steak

    • 2 Northern Ireland Farm Quality Assured Thick Sirloin Steaks
    • 1 tbsp Olive oil
    • 1 tbsp Worcestershire sauce
    • 1/2 tsp Salt
    • 1/2 tsp Black pepper
    • 1/2 tsp Ground cumin

    For the topping

    • 100 g Cheddar cheese grated
    • 2 tbsp sour cream
    • 1 tbsp Hot sauce (sriracha)
    • 2 Spring onions sliced
    • 1 Red chilli finely chopped
    • Fresh coriander chopped

    Method
    • Pre heat oven to 200°C (Fan 180°C) Gas mark 6.
    • Toss potatoes with olive oil, paprika, garlic powder, salt, and pepper, spread on a baking tray and roast for 35 - 40 minutes, turning halfway, until crispy.
    • While the potatoes roast, rub steaks with Worcestershire sauce, olive oil, salt, pepper, and cumin.
    • Heat a pan over high heat. Sear the steaks for 2- 3 minutes per side for medium-rare (or longer if preferred).
    • Rest the steaks for 5 minutes, then slice thinly.
    • Spread crispy potatoes on a large serving plate and sprinkle the grated cheese over and let it melt slightly.
    • Add sliced steak, then drizzle with sour cream and hot sauce.
    • Garnish with spring onions, chilli, and fresh coriander.
