Ingredients
- 2 Northern Ireland Farm Quality Assured rump steaks
- 3 tbsp Cornflour
- Pinch of black pepper
- 3 tbsp Rapeseed oil
- 1 Onion
- 2 Garlic cloves
- 1 Green pepper
- 1 Red pepper
- 2 Packets of black bean sauce
- 350 g long grain rice
- 2 scallions (optional)

Method
- On the green chopping board, peel and finely slice the onion. Peel and crush the garlic.
- Wash, deseed and finely slice peppers.
- Wash and finely slice scallions.
- On the red chopping board, remove visible fat from rump steak and slice thinly. Wash hands after handling raw meat.
- Cook rice as per packet instructions.
- Place cornflour in a mixing bowl, add black pepper and rump steak. Toss well
- Heat 2tbsp of oil in a wok or pan until hot, add beef and cook until brown.
- Remove beef to plate
- Reserve meat juice from the wok/pan
- Heat remaining 1 tbsp of oil in wok/pan, add vegetables and stir fry for 3 minutes to soften slightly.
- Add black bean sauce, beef and reserved meat juices back to the wok/pan.
- Toss all together well to combine and cook for 2 minutes.
- Serve with cooked rice.
- Garnish with scallions
