    Ingredients
    • 450 g Northern Ireland Quality Assured lean minced beef
    • 1 Red pepper
    • 4 Cherry tomatoes
    • 1 x 15 ml (1 tbsp) Pesto, tomato ketchup or sundried tomato paste
    • 2 x 15 ml (2 tbsp) Fresh basil
    • Frozen potato waffles, chips or potato wedges

    Method
    • Pre-heat the oven to220°C or Gas mark 7.
    • Remove the stalk and seeds from the pepper and cut into quarters. Cut the tomatoes in half.
    • Place on a baking tray.
    • Place the mince into a mixing bowl, using your hands divide into 4 equal portions and shape into burgers about 1 cm thick.  Remember to wash your hands thoroughly after handling raw meat.
    • Place the burgers on the baking tray next to the peppers and tomatoes.
    • Brush the pepper quarters with the pesto and fill with the tomato halves and basil.
    • Place the waffles, chips or wedges onto a baking tray.
    • Cook the burgers, pesto peppers and waffles/chips/wedges in the oven for 20 minutes.
    • Serve the burgers on top of the waffles with the pesto peppers and a side salad.
