Quick Massala

Ingredients

  • 225 g Northern Ireland Farm Quality Assured lean rump or sirloin steak
  • 1 Onion
  • 1 Courgette
  • 150 g Cherry tomatoes
  • 2 x 5 ml (2 tsp) Oil
  • 2 x 15 ml (2 tbsp) Tikka curry paste
  • 300 ml Passata or 1 x 400g can chopped tomatoes
  • 2 x 15 ml (2 tbsp) Greek yoghurt

Method

  • Peel and thinly slice the onion.
  • Cut off the top and bottom of the courgette and cut into dice.
  • Halve the cherry tomatoes.
  • On a separate chopping board cut the steaks into small chunks.  Remember to wash your hands thoroughly after handling raw meat.
  • Heat the oil in the wok, add the beef and curry paste and cook for 3-4 minutes.
  • Add the onion and courgette and cook for 3-4 minutes.  Stir well.
  • Add the passata or chopped tomatoes and stir well.  Cook for 3-4 minutes.
  • Add the Greek yogurt and cherry tomatoes and stir.  Cook for 1 minute.
  • Serve the curry with naan breads or poppadoms and boiled rice.
