Ingredients
- 450 g Northern Ireland Quality Assured lean minced beef
- 1 Red pepper
- 4 Cherry tomatoes
- 1 x 15 ml (1 tbsp) Pesto, tomato ketchup or sundried tomato paste
- 2 x 15 ml (2 tbsp) Fresh basil
- Frozen potato waffles, chips or potato wedges

Method
- Pre-heat the oven to220°C or Gas mark 7.
- Remove the stalk and seeds from the pepper and cut into quarters. Cut the tomatoes in half.
- Place on a baking tray.
- Place the mince into a mixing bowl, using your hands divide into 4 equal portions and shape into burgers about 1 cm thick. Remember to wash your hands thoroughly after handling raw meat.
- Place the burgers on the baking tray next to the peppers and tomatoes.
- Brush the pepper quarters with the pesto and fill with the tomato halves and basil.
- Place the waffles, chips or wedges onto a baking tray.
- Cook the burgers, pesto peppers and waffles/chips/wedges in the oven for 20 minutes.
- Serve the burgers on top of the waffles with the pesto peppers and a side salad.
