    Ingredients
    • 450 g Northern Ireland Farm Quality Assured
    • Lean lamb mince
    • 1 Carrot
    • 25 g Mushrooms
    • 1 Tomato
    • 1 x 15 ml (1 tbsp) Reduced sugar and salt tomato ketchup
    • 1 Egg
    • 2 x 15 ml (2 tbsp) Fresh parsley

    Method
    • Pre-heat the grill.
    • Soak the wooden skewers in water.

    Prepare the vegetables:

    • Remove the top and bottom from the carrot, peel and grate;
    • Thinly slice the mushrooms;
    • Finely chop the tomato;
    • Finely chop the parsley.

    Method

    • Break the egg into a small mixing bowl and beat.
    • Place the lamb mince in a large mixing bowl and add the carrot, mushrooms, tomato and tomato ketchup.  Mix well.
    • Add the beaten egg and mix well.
    • Divide the mixture into equal portions and mould around the skewers.  Remember to wash your hands thoroughly after handling raw meat.
    • Place the skewers onto a baking tray and grill for 10 – 12 minutes until the juices run clear, turning occasionally.
    • Garnish with the chopped parsley and serve with crunchy crudités and a selection of dips.
