Beef salad wraps

Ingredients

Sliced cooked Northern Ireland Farm Quality Assured roast beef

1 red pepper

1 yellow pepper

1 small celery stalk

2 medium flour tortillas

25g grated Cheddar cheese

1 x 15ml (1 tbsp) low fat mayonnaise

1 x 15ml (1 tbsp) natural yogurt

 

Equipment

Chopping board, knife, mixing bowl, mixing spoon, grater, measuring spoons, microwave.

Method

  1. Remove the stalk and seeds from the peppers and cut into small dice.
  2. Slice the celery finely.
  3. Grate the cheese.
  4. Place the beef slices, peppers, celery, cheese, mayonnaise and yogurt in a bowl.  Mix together.
  5. Heat the tortillas for a few seconds in the microwave.
  6. Assemble the tortillas: place half the beef mixture in the middle of the bottom half of 1 tortilla, fold the tortilla ensuring all the filling is covered.
