Ingredients
- 450 g cooked Northern Ireland Farm Quality Assured roast beef thinly sliced and shredded
- 470 g baby mushrooms
- 120 g Onions
- 400 g Tin chopped tomatoes
- 350 g Asparagus
- 60 g Fresh basil
- 125 g Ball of reduced fat mozzarella cheese
- 1 x 5 ml (1 tsp) Olive oil
- 1 x 12 inch pre-baked pizza base
To serve:
- Green salad

Method
- Pre-heat the oven to 230oC.
Prepare the vegetables and mozzarella:
- Slice the baby mushrooms;
- Peel, remove the top and bottom of the onions and chop;
- Chop the asparagus into pieces approx. 1.5 inches long;
- Finely chop the basil;
- Thinly slice the mozzarella.
Method
- Heat the oil in a large non-stick saucepan.
- Add the mushrooms and onion and cook for 5 minutes, stirring occasionally.
- Add the tomatoes and bring to the boil.
- Reduce the heat and simmer for 7 minutes.
- Add the asparagus and basil and simmer for 5 minutes.
- Remove the pan from the heat. Stir in the beef and half of the cheese.
- Place the pizza base on a large baking tray.
- Spread the beef mixture evenly onto the base and place the remaining slices of mozzarella on top.
- Bake for 8 to 10 minutes or until the cheese has melted.
- Cut into 8 slices and serve immediately with a green salad.
