    Ingredients
    • 450 g cooked Northern Ireland Farm Quality Assured roast beef thinly sliced and shredded
    • 470 g baby mushrooms
    • 120 g Onions
    • 400 g Tin chopped tomatoes
    • 350 g Asparagus
    • 60 g Fresh basil
    • 125 g Ball of reduced fat mozzarella cheese
    • 1 x 5 ml (1 tsp) Olive oil
    • 1 x 12 inch pre-baked pizza base

    To serve:

    • Green salad

    Method
    •   Pre-heat the oven to 230oC.

    Prepare the vegetables and mozzarella:

    • Slice the baby mushrooms;
    • Peel, remove the top and bottom of the onions and chop;
    • Chop the asparagus into pieces approx. 1.5 inches long;
    • Finely chop the basil;
    • Thinly slice the mozzarella.

    Method

    • Heat the oil in a large non-stick saucepan.
    • Add the mushrooms and onion and cook for 5 minutes, stirring occasionally.
    • Add the tomatoes and bring to the boil.
    • Reduce the heat and simmer for 7 minutes.
    • Add the asparagus and basil and simmer for 5 minutes.
    • Remove the pan from the heat. Stir in the beef and half of the cheese.
    • Place the pizza base on a large baking tray.
    • Spread the beef mixture evenly onto the base and place the remaining slices of mozzarella on top.
    • Bake for 8 to 10 minutes or until the cheese has melted.
    • Cut into 8 slices and serve immediately with a green salad.
