Lamb chops with tomato salsa

Ingredients

12 Northern Ireland Farm Quality Assured lamb chops
2 tbsp olive oil

Spice Mixture:
1 tsp ground cumin
1 tsp ground coriander
2 tsp paprika
seasoning to taste

Tomato Salsa:
8 - 10 cherry tomatoes, chopped
1 cucumber, chopped
1 red onion, finely chopped
1 - 2 chillis, chopped
2 tbsp fresh coriander, chopped
juice of 1 lemon
2 cloves of garlic, chopped
1 tbsp olive oil

 

Method

Drizzle the olive oil over the cutlets.

Combine the spice mixture ingredients

Dip the cutlets in the mixture. Shake off the excess. Grill or Barbecue for 3-4 minutes on each side.

Mix the salsa in a large bowl and serve the crispy cutlets with the salsa.

This dish is delicious also served with guacamole
