INGREDIENTS:
225g (8oz) *lean beef grilling/frying steaks
2 garlic cloves, crushed
2 tomatoes, diced
3 x 15ml sp (3tbsp) plum sauce
1 x 15ml sp (1tbsp) tomato ketchup
250g (9oz) cooked rice
1 red pepper, seeded & finely chopped
1 x 200g can sweetcorn, drained
2 spring onions, chopped
1 x 15ml sp (1tbsp) sweet chilli sauce
1 x 10ml sp (1tbsp) lemon juice
METHOD:
· In a large non-stick wok or saucepan fry the
beef steaks (cut into thin strips) and cloves of
garlic until browned, approximately 3-4
minutes.
· Add tomatoes, plum sauce and
tomato ketchup and cook for 3-4 minutes.
Meanwhile, prepare the rice.
· Place pre-cooked rice, 1 red pepper,
sweetcorn, spring onions, sweet chilli sauce and
lemon juice in a large non-stick wok or saucepan
and cook for 4-5 minutes, until piping hot.
· The sweetness of the plum stir-fry
and the fiery chilli rice complement each other
deliciously.
