
INGREDIENTS:
450g (1lb) lean mince beef
Salt and black pepper
1 red pepper, seeded and quartered
1 x 15ml sp (1tbsp) pesto, tomato ketchup or sundried tomatoes paste
4 small tomatoes, halved
2 x 15ml sp (2tbsp) fresh basil
Frozen potato waffles, chips or potato wedges
METHOD:
Temperature: gas mark 7, 220°C, 425°F
· Season the mince. Divide the mince into 4 and shape into burgers, flatten to ensure quick cooking (about 1cm thick).
· Place on a non-stick baking tray. Place pepper quarters next to the burgers.
· Brush the peppers with the pesto and fill with the tomatohalves and basil.
· Place in a pre-heated oven with the waffles, chips or wedges and cook for 20 minutes.
· Serve the burgers topped with pepper or tomato on waffles, accompany with coleslawor beans and salad.
