Lamb chops with honey

Ingredients
4 Northern Ireland Farm Quality Assured loin chops 3 tablespoons of clear honey 15g/0.50 oz butter Half a teaspoon of grated lemon rind 4 teaspoons of chopped fresh mint or 2 dried
Method
Dot the chops with half the butter and grill for 8 to 10 minutes or until browned. Turn and cook the other side for 3 or 4 minutes. Combine the mint, honey and lemon rind and spread on the meat. Cook for another five minutes.
