INGREDIENTS:
225g (8oz) *lean beef grilling/frying steaks
1 x 15ml sp (1tbsp) coriander seeds
2½ml sp (½ tsp) black
peppercorns
1 x 15ml sp (1tbsp) fresh thyme
1 x 15ml sp (1tbsp) olive oil
1 lime rind and juice
Pinch of chilli powder
METHOD:
· Place coriander seeds, black
peppercorns and fresh thyme in a large
bowl and crush together.
· Add olive oil, rind and juice of
lime, a pinch of chilli powder
and mix together to make the marinade.
· Place beef cut into 2½cm
(1inch) cubes, into the marinade ingredients, cover and
refrigerate.
· Marinate for approximately 30
minutes to 4 hours. (The longer you leave the meat
marinating, the more intense the flavour will be).
· Thread the meat onto the skewers (if
wooden pre-soak to prevent burning). Cook under a preheated
grill or barbecue for approximately 12-15 minutes, turning
occasionally.
· Pile these crunchy skewers onto a
bundle of noodles and finish with a generous
helping of yoghurt mixed with spring
onion and cucumber.
