INGREDIENTS:
225g (8oz) *lean beef grilling/frying steaks
2 x 15ml sp (2tbsp) tikka curry paste
1 onion, thinly sliced
1 courgette, finely diced
300ml (½ pt) passatta or
1 x 400g can chopped tomatoes
2 x 15ml sp (2tbsp) Greek yoghurt
150g (5oz) cherry tomatoes, halved
METHOD:
· Cut the beef into 1.25cm (½
inch) cubes. In a large hot non-stick wok or saucepan fry the
cubes in tikka curry paste until browned,
approximately 3-4 minutes.
· Add onion and
courgette, and cook for 4 minutes.
· Add passatta or can chopped
tomatoes and cook for a further 3-4 minutes then stir
through Greek yogurt and cherry
tomatoes. Gently heat for 1 minute.
· Serve the curry with naan
breads or poppadoms and a pile of
boiled rice.
