Mexican Burritos

INGREDIENTS:
450g (1lb) lean minced beef
1 chopped onion
1 red pepper, seeded and finely chopped
1 green pepper, seedeed and finely chopped
4 x 15ml sp (4tbsp) tomato puree
1 460g jar of salsa sauce
1 pack of flour tortillas
50g (2oz) cheddar cheese, grated

METHOD:

 Dry fry mince with the onion until browned.
· Add pepper and cook for 3-4 minutes.
· Add tomato puree and salsa sauce.
· Cover pan and simmer for 15 minutes.
· Serve this mixture in the tortillas.
· Heat a non-stick frying pan.
· Place tortilla into pan, add a spoonful of the mixture, sprinkle with a little cheese.  Brush the edge with water and fold into a “D” shape (be careful not to burn fingers – use an oven glove).  Press on edge to seal.
· Fry for 1-2 minutes on each side, or place mixture in line down the center of the tortilla, fold each side and top and bottom.
· Serve with a mixed salad and Mexican dips of your choice.
