Ingredients
- 4 Northern Ireland Farm Quality Assured steaks (rump, sirloin)
- 1 Red onion
- 2 Beef tomatoes
- 1 x 5 ml (1 tsp) Oil
- 25 g Wild rocket
- 125 ml Reduced fat French dressing
To Serve:
- Mashed potato
- Salad

Method
- Peel, remove the top and bottom of the onion and slice thickly.
- Thickly slice the tomatoes.
- Heat the oil in a frying pan and fry the tomato slices and red onion for 1 minute on each side.
- Remove the tomato and onion and wrap in tin foil to keep warm.
- In the same pan, fry the steaks for 4 minutes on each side. Remove from the pan and wrap in tin foil to rest.
- Remove the tomatoes, onion and steaks from the foil and arrange on plates. Add the rocket.
- Drizzle over the dressing.
- Serve with mashed potato and salad.
